It started with my grandmother's
kitchen and a cast iron pan
Three generations back, our family grew peppers in the hill country of Texas. Not for profit — for flavor. Every harvest, my grandmother Rosa would spend a week at the stove, slow-roasting, blending, and bottling. The whole house smelled like smoked chipotle and toasted cumin for days.
When Rosa passed in 2015, we found her notebooks. Sixteen recipes. Margin notes about which peppers to use at which ripeness. Heat levels measured in "gentle warmth" and "joyful burn." We knew we couldn't keep them to ourselves.
We make every batch in small runs — under 500 bottles — because that's the only way to maintain the care Rosa would have approved of. No shortcuts. No artificial anything. Just fire, family, and flavor.

"Heat without flavor is just pain. Flavor without heat is just food. We're after something else entirely."
— Rosa Valenzuela, Founder's Grandmother
We make hot sauce the way it was always supposed to be made
Flavor First
Heat is a tool, not a destination. Every sauce is built around depth of flavor — smoke, acid, sweetness — before we think about Scoville units.
Real Ingredients
No artificial preservatives. No "natural flavors" masking corners cut. You can read every ingredient on our label and know exactly what it is.
Family Recipes
Every sauce in our lineup traces back to a handwritten recipe card. We don't develop products. We steward traditions.
Small Batches
We cap every run at 500 bottles. When a batch sells out, it's gone until we make more. That scarcity isn't a marketing trick — it's quality control.
A new bottle.
Every month.
Never repeated.
The Monthly Batch Club is our most exclusive offering. Each month, subscribers receive one limited-edition sauce — a recipe from the notebook that's too special for mass production. Members get first access, a tasting card, and the story behind the batch.

Four people. One kitchen. Unlimited opinions about chili peppers.
We're a two-generation family operation in Hill Country, Texas. No outside investors. No corporate stakeholders. Just us, our recipes, and a very well-seasoned cast iron collection.
Marco Valenzuela
Co-founder & Head of Flavor
Grew up watching Rosa cook. Spent 6 years in professional kitchens before realizing the best food he ever tasted came from that hill country house. Now runs all sauce development.
Lucia Valenzuela
Co-founder & Operations
Marco's sister. She runs everything that isn't cooking — sourcing, bottling, shipping, and the supply relationships that keep ingredients honest. The reason batches actually ship on time.
Tomas Valenzuela
Pepper Grower & Taste Tester
Marco and Lucia's father. Still grows peppers on the original family land. Insists his palate is better than anyone else's. He's probably right — nothing ships without his approval.
"I've been hoarding bottles of the Smoked Serrano since I discovered it. Nothing else at the grocery store even comes close. It's the kind of flavor that makes you call your mom."
Jamie R., Austin TX
"The Monthly Batch Club has been one of my best subscriptions. Every box tells a story. The tasting card alone is worth it — I've cooked four new dishes from the recipes on the back."
Priya M., Denver CO
"Bought a gift set for my dad's birthday and he cried. Not from heat — from the handwritten note in the box. That's not a hot sauce company. That's a family."
Derek W., Chicago IL
